Ask FCB: Ultimate Tailgate Foods

Our constant source of inspiration, Mr. Finley, has submitted the following,

So, football season is upon us and the scenario is this: You have three hours before the big game. Your kitchen is stocked with anything you want or need. You want something special to eat on while watching your team play. What is your go-to, never fail, tailgating food that you love the most? I have a couple ideas, mind you. But I leave it in your hands. 

 Well, you know, when watching Penn State blaze a trail to glory, the likes of which that can only be seen among the top 10 college teams in the country, stretching back in a legacy of 123 years, including 7 perfect seasons and over 800 wins... what was the question?

Mini Pizzas:
1 tbsp yeast, 1.5 cups warm water, 3.5 cups sifted flour, 1tbsp olive oil, 1 tbsp honey, pinch of salt.
Mix yeast with water and set aside for a few minutes until it bubbles. Then mix with flour, salt, and honey in a large bowl. Knead until the dough no longer sticks to your fingers. Cut a cross in the top of the dough ball and let sit in the bowl, covered with a towel, for 2 hours for it to rise.
Preheat oven to really, really hot. Like, if your oven gets to 500, get it there. Roll out the dough into a thin sheet, and slice in to 4 equal sections. Using your hands, stretch these out into little circles, maybe 6 inches across. Lay them out on a nonstick baking sheet and bake for 20 minutes.
Leave out bowls of pizza sauce, cheese, onions, sausage, any pizza toppings you like. When your buddies come over, everyone can suss up their crust and throw it back in the oven, (now set to 250) for 15 minutes.

Nachos:
Cook up some chicken breast, seasoned with paprika and onion powder, and shred. Heat up a can of refried beans, and hit it with a shot of Tobasco. In a 9x13 casserole dish layer tortilla chips, beans, chicken, shredded cheese, diced tomatoes, diced avocado, and sour cream.

Chips and Dip:
Pick up 8oz of your favorite sour cream. Mince some fresh basil, or get the stuff in a jar in the spice aisle at the grocery store. In a mixing bowl, mix together the sour cream, a tbsp of basil, a tsp of onion powder, and a packet of Hidden Valley ranch seasoning. Perfect dip for pretzels, chips, crackers, anything.

  1. Not sure why, but I've been craving nachos in a big way for the last few days. It's gotten to the point that I realize it won't go away until I just eat them... thank goodness for football season.
